Thai Chicken Skewers
This tasty Thai dish is guaranteed to impress your guests. Fragrant Thai Chicken Skewers are easy to make and can be prepared in advance. To prepare, marinate strips of chicken in a mix of zesty lime, coriander stalks, sugar, fish sauce, garlic, ginger and curry paste for at least two hours. Then thread the strips onto pre-soaked skewers and grill until golden. To finish, arrange the skewers on a plate and serve with a garnish of coriander leaves and a pot of sweet chilli sauce.
Wild Mushroom Tartlets
If you’d like to include a vegetarian option, wild mushroom tartlets are a delicious combination of crisp puff pastry and tender, seasoned mushrooms. These canapés are so tasty that even your non-vegetarian guests will want to snap them up. Prepare the dish by lightly frying mushrooms in butter and season with Parmesan cheese, parsley and garlic. Alternatively, try a refreshing Campari Mint Spritz for simple sophistication. Mix 1 part Campari, with 1 part cranberry juice and 3 parts Prosecco over ice. To finish, add 5 fresh mint leaves and bruise or twist in the glass.
